Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 4 cloves of garlic, minced
  • 1 inch of ginger, grated
  • 2 tomatoes, chopped
  • 2 green peppers, sliced
  • 1/4 cup vegetable oil
  • 2 cups chicken broth
  • 1 teaspoon turmeric
  • 1 teaspoon cardamom
  • 1/2 teaspoon ground fenugreek
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Add the chicken pieces and brown on all sides.
  4. Stir in the tomatoes, green peppers, turmeric, cardamom, fenugreek, nutmeg, salt, and pepper.
  5. Pour in the chicken broth and bring to a simmer. Cover and cook for 45-50 minutes, or until the chicken is tender.
  6. Adjust the seasoning if needed and serve the Doro Alicha hot with injera or rice.
