Ingredients

  • 4 chicken thighs
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 carrots, sliced
  • 2 tbsp berbere spice mix
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • Salt to taste
  • Water

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions and cook until soft and translucent.
  2. Add the garlic, ginger, and berbere spice mix. Cook for 2-3 minutes, stirring constantly to prevent burning.
  3. Add the chicken thighs to the pot and brown on all sides.
  4. Pour in the chicken broth and enough water to cover the chicken. Season with salt to taste.
  5. Add the sliced carrots to the pot. Cover and simmer for 45-50 minutes, or until the chicken is tender and the sauce has thickened.
  6. Serve the Doro Key Sir Wat hot with injera or rice.
