Ingredients
- 4 chicken thighs
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 tbsp berbere spice mix
- 2 large beetroots, peeled and diced
- 2 tomatoes, chopped
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
- Add the berbere spice mix and cook for 2-3 minutes, stirring constantly to prevent burning.
- Add the chicken thighs to the pot and brown on all sides, about 5 minutes.
- Stir in the diced beetroot, tomatoes, and chicken broth. Season with salt to taste.
- Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the chicken is tender and the beetroot is cooked through.
- Serve the Doro Key Wat hot with injera or rice.
