Ingredients

  • 4 chicken thighs
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tbsp berbere spice mix
  • 2 large beetroots, peeled and diced
  • 2 tomatoes, chopped
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  2. Add the berbere spice mix and cook for 2-3 minutes, stirring constantly to prevent burning.
  3. Add the chicken thighs to the pot and brown on all sides, about 5 minutes.
  4. Stir in the diced beetroot, tomatoes, and chicken broth. Season with salt to taste.
  5. Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the chicken is tender and the beetroot is cooked through.
  6. Serve the Doro Key Wat hot with injera or rice.
