Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup mushrooms, sliced
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup berbere spice blend
  • 1/4 cup vegetable oil
  • 1 cup chicken broth
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onions and sauté until golden brown.
  3. Stir in the garlic, ginger, and berbere spice blend, and cook for 2 minutes.
  4. Add the chicken pieces and brown on all sides.
  5. Pour in the chicken broth, cover, and simmer for 45 minutes.
  6. Add the mushrooms and continue to simmer for an additional 15 minutes.
  7. Season with salt to taste.
  8. Serve the Doro Kik Wat hot with injera or rice.
