Ingredients
- 1 whole chicken, cut into pieces
- 1 cup mushrooms, sliced
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup berbere spice blend
- 1/4 cup vegetable oil
- 1 cup chicken broth
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onions and sauté until golden brown.
- Stir in the garlic, ginger, and berbere spice blend, and cook for 2 minutes.
- Add the chicken pieces and brown on all sides.
- Pour in the chicken broth, cover, and simmer for 45 minutes.
- Add the mushrooms and continue to simmer for an additional 15 minutes.
- Season with salt to taste.
- Serve the Doro Kik Wat hot with injera or rice.
