Ingredients

  • 1 whole chicken, cut into pieces
  • 1 head of cauliflower, cut into florets
  • 2 onions, finely chopped
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1/4 cup of Ethiopian spiced butter (Niter Kibbeh)
  • 1/4 cup of Berbere spice mix
  • 2 cups of chicken broth
  • Salt to taste

Instructions

  1. Heat the spiced butter in a large pot over medium heat.
  2. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Add the Berbere spice mix and cook for 2-3 minutes to release the flavors.
  4. Add the chicken pieces and cook until browned on all sides.
  5. Pour in the chicken broth and season with salt. Cover and simmer for 30 minutes.
  6. Add the cauliflower florets to the pot and continue to simmer for another 20-30 minutes, or until the chicken is tender and the cauliflower is cooked through.
  7. Serve the Doro Tikil Wat hot with injera or rice.
