Ingredients
- 1 whole chicken, cut into pieces
- 1 head of cauliflower, cut into florets
- 2 onions, finely chopped
- 4 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1/4 cup of Ethiopian spiced butter (Niter Kibbeh)
- 1/4 cup of Berbere spice mix
- 2 cups of chicken broth
- Salt to taste
Instructions
- Heat the spiced butter in a large pot over medium heat.
- Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the Berbere spice mix and cook for 2-3 minutes to release the flavors.
- Add the chicken pieces and cook until browned on all sides.
- Pour in the chicken broth and season with salt. Cover and simmer for 30 minutes.
- Add the cauliflower florets to the pot and continue to simmer for another 20-30 minutes, or until the chicken is tender and the cauliflower is cooked through.
- Serve the Doro Tikil Wat hot with injera or rice.
