Ingredients

  • 225g self-raising flour
  • 1 tsp ground cinnamon
  • 175g unsalted butter, softened
  • 175g light brown sugar
  • 3 eggs, beaten
  • 450g apples, peeled, cored, and chopped
  • 25g flaked almonds

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line a 20cm (8-inch) round cake tin.
  2. In a bowl, mix the flour and cinnamon together.
  3. In a separate large bowl, cream the butter and sugar together until pale and fluffy.
  4. Gradually beat in the eggs, adding a little flour with each addition.
  5. Fold in the remaining flour and then gently stir in the chopped apples.
  6. Spoon the mixture into the prepared tin and level the surface. Sprinkle with flaked almonds.
  7. Bake in the preheated oven for 45-50 minutes, or until the cake is well risen, golden brown, and a skewer inserted into the center comes out clean.
  8. Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
