Ingredients
- 225g self-raising flour
- 1 tsp ground cinnamon
- 175g unsalted butter, softened
- 175g light brown sugar
- 3 eggs, beaten
- 450g apples, peeled, cored, and chopped
- 25g flaked almonds
Instructions
- Preheat the oven to 180°C (350°F). Grease and line a 20cm (8-inch) round cake tin.
- In a bowl, mix the flour and cinnamon together.
- In a separate large bowl, cream the butter and sugar together until pale and fluffy.
- Gradually beat in the eggs, adding a little flour with each addition.
- Fold in the remaining flour and then gently stir in the chopped apples.
- Spoon the mixture into the prepared tin and level the surface. Sprinkle with flaked almonds.
- Bake in the preheated oven for 45-50 minutes, or until the cake is well risen, golden brown, and a skewer inserted into the center comes out clean.
- Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
