Ingredients

  • 1.5 pounds clams, cleaned
  • 2 tablespoons fermented black beans
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 1/2 teaspoon cornstarch
  • 1/4 cup water
  • 2 tablespoons vegetable oil

Instructions

  1. Soak the fermented black beans in water for 10 minutes, then drain and mash them slightly.
  2. In a small bowl, mix together the soy sauce, Shaoxing wine, sugar, and cornstarch. Set aside.
  3. Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic, ginger, and mashed black beans. Stir-fry for 30 seconds.
  4. Add the clams and stir-fry for 2 minutes.
  5. Pour in the soy sauce mixture and water. Cover and cook for 5 minutes, or until the clams have opened.
  6. Garnish with chopped green onions and serve hot.
