Ingredients
- 1.5 pounds clams, cleaned
- 2 tablespoons fermented black beans
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon sugar
- 1/2 teaspoon cornstarch
- 1/4 cup water
- 2 tablespoons vegetable oil
Instructions
- Soak the fermented black beans in water for 10 minutes, then drain and mash them slightly.
- In a small bowl, mix together the soy sauce, Shaoxing wine, sugar, and cornstarch. Set aside.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic, ginger, and mashed black beans. Stir-fry for 30 seconds.
- Add the clams and stir-fry for 2 minutes.
- Pour in the soy sauce mixture and water. Cover and cook for 5 minutes, or until the clams have opened.
- Garnish with chopped green onions and serve hot.
