Ingredients
- 1 lb (450g) beef sirloin, thinly sliced
- 2 tbsp fermented black beans, rinsed and minced
- 2 cloves garlic, minced
- 1 red bell pepper, julienned
- 2 green onions, sliced
- 2 tbsp vegetable oil
- 1 tbsp Shaoxing wine
- 1 tbsp soy sauce
- 1 tsp sugar
- 1/2 tsp cornstarch
- 1/4 cup chicken broth
- Salt to taste
Instructions
- In a small bowl, mix the Shaoxing wine, soy sauce, sugar, and cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a wok over high heat. Add the beef and stir-fry until it is no longer pink. Remove the beef from the wok and set aside.
- Heat the remaining tablespoon of vegetable oil in the wok. Add the minced garlic and fermented black beans, and stir-fry until fragrant.
- Add the red bell pepper and stir-fry for 2-3 minutes.
- Return the beef to the wok. Pour in the Shaoxing wine mixture and chicken broth. Stir-fry for another 2-3 minutes until the sauce thickens.
- Season with salt to taste and garnish with sliced green onions.
