Dou Chi Niu Rou Si (stir-fried Shredded Beef With Black Bean Sauce)

Ingredients

  • 1 lb (450g) beef sirloin, thinly sliced
  • 2 tbsp fermented black beans, rinsed and minced
  • 2 cloves garlic, minced
  • 1 red bell pepper, julienned
  • 2 green onions, sliced
  • 2 tbsp vegetable oil
  • 1 tbsp Shaoxing wine
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp cornstarch
  • 1/4 cup chicken broth
  • Salt to taste

Instructions

  1. In a small bowl, mix the Shaoxing wine, soy sauce, sugar, and cornstarch. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a wok over high heat. Add the beef and stir-fry until it is no longer pink. Remove the beef from the wok and set aside.
  3. Heat the remaining tablespoon of vegetable oil in the wok. Add the minced garlic and fermented black beans, and stir-fry until fragrant.
  4. Add the red bell pepper and stir-fry for 2-3 minutes.
  5. Return the beef to the wok. Pour in the Shaoxing wine mixture and chicken broth. Stir-fry for another 2-3 minutes until the sauce thickens.
  6. Season with salt to taste and garnish with sliced green onions.
