Ingredients

  • 1.5 lbs pork ribs, cut into individual pieces
  • 3 tbsp fermented black beans
  • 3 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp ground white pepper
  • 2 cups water

Instructions

  1. Soak the fermented black beans in water for 15 minutes, then drain.
  2. In a large pot, heat some oil over medium heat and add the garlic, ginger, and green onions. Sauté until fragrant.
  3. Add the pork ribs to the pot and brown them on all sides.
  4. Stir in the fermented black beans, soy sauce, Shaoxing wine, sugar, salt, and white pepper.
  5. Pour in the water and bring the mixture to a boil. Then reduce the heat to low, cover, and simmer for 1 hour, or until the pork ribs are tender.
  6. Once the pork ribs are tender, uncover the pot and allow the sauce to thicken slightly.
  7. Serve the Dou Chi Pai Gu hot, garnished with additional green onions if desired.
