Ingredients

  • 500g pork ribs
  • 2 tablespoons fermented black beans
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 1/2 teaspoon cornstarch
  • 1/4 teaspoon white pepper
  • 1 green onion, chopped
  • 1 tablespoon cooking oil
  • 1 teaspoon sesame oil
  • 1 red chili, sliced (optional)

Instructions

  1. Rinse the pork ribs and pat them dry with paper towels.
  2. Soak the fermented black beans in water for 5 minutes, then drain and roughly chop them.
  3. In a bowl, mix the chopped black beans, minced garlic, minced ginger, soy sauce, Shaoxing wine, sugar, cornstarch, and white pepper.
  4. Add the pork ribs to the bowl and coat them evenly with the black bean mixture. Marinate for 15 minutes.
  5. Place the marinated pork ribs in a heatproof dish and sprinkle with the chopped green onion. Drizzle with cooking oil and sesame oil. Add the sliced red chili if using.
  6. Steam the pork ribs over high heat for 45 minutes, or until tender.
  7. Serve the Dou Chi Pai Gu hot with steamed rice.
