Ingredients

  • 1 lb pork belly, thinly sliced
  • 4 oz vermicelli noodles
  • 2 pieces dried shiitake mushrooms, soaked and sliced
  • 1 block firm tofu, cubed
  • 3 green onions, chopped
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the ginger, garlic, and green onions, and sauté until fragrant.
  2. Add the pork belly slices and cook until browned.
  3. Pour in the Shaoxing wine, soy sauce, oyster sauce, and sugar. Stir to combine.
  4. Add the chicken broth, shiitake mushrooms, and tofu. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
  5. Add the vermicelli noodles and continue to simmer for another 10-15 minutes, or until the noodles are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot and garnish with additional chopped green onions, if desired.
