Dou Pao Yu (braised Fish With Tofu Skin)

Ingredients

  • 500g fish fillets
  • 100g tofu skin
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 2 cups chicken broth
  • 2 tbsp vegetable oil

Instructions

  1. Soak the tofu skin in warm water until softened, then cut into pieces.
  2. Season the fish fillets with salt and white pepper.
  3. Heat vegetable oil in a wok over medium heat, then add ginger and garlic, and stir-fry until fragrant.
  4. Add the fish fillets and tofu skin, and stir-fry for 2 minutes.
  5. Pour in the soy sauce, Shaoxing wine, sugar, and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Season with salt and white pepper, then add green onions and cook for another 2 minutes.
  7. Transfer to a serving dish and serve hot.
