Doubles (doubles Delight)
Doubles, a popular street food in Trinidad and Tobago, is a delightful and savory snack made with fried bread and curried chickpeas.
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup water
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp cayenne pepper
- Salt to taste
- Oil for frying
Instructions
- In a bowl, mix the flour, baking powder, and salt. Gradually add water and knead the dough until smooth. Cover and let it rest for 15 minutes.
- Divide the dough into small balls, then flatten each ball into a small round disc.
- Heat oil in a pan over medium heat. Fry the dough discs until golden brown and puffy. Drain on paper towels.
- In a separate pan, sauté the onion and garlic until fragrant. Add the curry powder, turmeric, cumin, and cayenne pepper. Stir in the cooked chickpeas and cook for 5-7 minutes. Season with salt.
- To assemble, place a spoonful of the curried chickpeas between two pieces of fried bread. Serve hot.
