Dovga (creamy Yogurt Soup)
Dovga is a traditional creamy yogurt soup that originates from Bukharan Jewish Cuisine. It is a comforting and nourishing dish that is perfect for any time of the year.
Ingredients
- 6 cups plain yogurt
- 1/2 cup rice
- 4 cups water
- 2 eggs
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh herbs (dill, parsley, cilantro)
Instructions
- In a large pot, combine the yogurt, rice, and water. Bring to a boil over medium heat, then reduce the heat and simmer for 20 minutes, stirring occasionally.
- In a bowl, whisk together the eggs, flour, salt, and black pepper until smooth.
- Gradually add a ladleful of the hot yogurt mixture to the egg mixture, whisking constantly to temper the eggs.
- Pour the egg mixture back into the pot of yogurt soup, stirring constantly to prevent the eggs from curdling.
- Add the chopped herbs and continue to cook for an additional 5 minutes, stirring frequently.
- Remove from heat and let the dovga cool slightly before serving.
