Ingredients

  • 6 cups plain yogurt
  • 1/2 cup rice
  • 4 cups water
  • 2 eggs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh herbs (dill, parsley, cilantro)

Instructions

  1. In a large pot, combine the yogurt, rice, and water. Bring to a boil over medium heat, then reduce the heat and simmer for 20 minutes, stirring occasionally.
  2. In a bowl, whisk together the eggs, flour, salt, and black pepper until smooth.
  3. Gradually add a ladleful of the hot yogurt mixture to the egg mixture, whisking constantly to temper the eggs.
  4. Pour the egg mixture back into the pot of yogurt soup, stirring constantly to prevent the eggs from curdling.
  5. Add the chopped herbs and continue to cook for an additional 5 minutes, stirring frequently.
  6. Remove from heat and let the dovga cool slightly before serving.
