Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1 cup peanut butter
  • 4 cups vegetable broth
  • 2 cups chopped tomatoes
  • 4 cups chopped spinach
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, ground coriander, ground cumin, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Add the peanut butter, vegetable broth, and chopped tomatoes. Stir to combine and bring to a simmer.
  5. Add the chopped spinach and cook for an additional 10 minutes, until the spinach is wilted and the stew has thickened.
  6. Season with salt and pepper to taste.
  7. Serve the Dovi hot with rice or sadza.
