Dovi (peanut Butter Stew)
Dovi, also known as Peanut Butter Stew, is a traditional Zimbabwean dish that is rich, creamy, and full of flavor. It is a popular comfort food that is perfect for a cozy night in or for sharing with friends and family.
Ingredients
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1 cup peanut butter
- 4 cups vegetable broth
- 2 cups chopped tomatoes
- 4 cups chopped spinach
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, ground coriander, ground cumin, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the peanut butter, vegetable broth, and chopped tomatoes. Stir to combine and bring to a simmer.
- Add the chopped spinach and cook for an additional 10 minutes, until the spinach is wilted and the stew has thickened.
- Season with salt and pepper to taste.
- Serve the Dovi hot with rice or sadza.
