Ingredients

  • 4 medium zucchinis
  • 1 pound ground meat (beef or lamb)
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the zucchinis and scoop out the flesh, leaving a shell to be stuffed.
  3. In a bowl, mix the ground meat, rice, onion, tomatoes, parsley, dill, salt, and pepper.
  4. Stuff the zucchinis with the meat and rice mixture.
  5. Place the stuffed zucchinis in a baking dish, drizzle with olive oil, and cover with foil.
  6. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the zucchinis are tender and the filling is cooked through.
  7. Serve hot and enjoy!
