Ingredients
- 1 cup Dragon Phoenix tea leaves
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1/2 red bell pepper, thinly sliced
- 1/4 cup roasted peanuts
- 2 tbsp sesame seeds
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1/4 cup chopped green onions
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp sesame oil
- Salt and pepper to taste
Instructions
- In a large bowl, soak the Dragon Phoenix tea leaves in hot water for 5 minutes. Drain and set aside.
- In a separate bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, salt, and pepper to make the dressing.
- Combine the soaked tea leaves, cucumber, carrot, red bell pepper, peanuts, sesame seeds, cilantro, mint, and green onions in a large salad bowl.
