Dragon Vegetable Fried Rice

Ingredients

  • 3 cups cooked rice
  • 1 cup mixed vegetables (bell peppers, carrots, peas, corn)
  • 1 onion, finely chopped
  • 3-4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2-3 green chilies, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp chili sauce
  • 1 tbsp vinegar
  • 1 tsp sugar
  • Salt to taste
  • 2 tbsp oil
  • 1/4 cup spring onions, chopped

Instructions

  1. Heat oil in a wok or large pan over medium-high heat.
  2. Add the chopped onions, garlic, ginger, and green chilies. Sauté until the onions are soft and translucent.
  3. Add the mixed vegetables and stir-fry for 3-4 minutes until they are slightly tender.
  4. Push the vegetables to one side of the pan and add the cooked rice to the other side.
  5. Pour the soy sauce, chili sauce, vinegar, sugar, and salt over the rice. Mix well to combine with the vegetables.
  6. Cook for another 3-4 minutes, stirring constantly, until everything is well combined and heated through.
  7. Garnish with chopped spring onions and serve hot.
