Dragon Vegetable Fried Rice
Dragon Vegetable Fried Rice is a popular Indo-Chinese dish that is packed with flavor and loaded with colorful vegetables. It's a great way to use up leftover rice and create a delicious and satisfying meal.
Ingredients
- 3 cups cooked rice
- 1 cup mixed vegetables (bell peppers, carrots, peas, corn)
- 1 onion, finely chopped
- 3-4 cloves garlic, minced
- 1 inch ginger, grated
- 2-3 green chilies, finely chopped
- 2 tbsp soy sauce
- 1 tbsp chili sauce
- 1 tbsp vinegar
- 1 tsp sugar
- Salt to taste
- 2 tbsp oil
- 1/4 cup spring onions, chopped
Instructions
- Heat oil in a wok or large pan over medium-high heat.
- Add the chopped onions, garlic, ginger, and green chilies. Sauté until the onions are soft and translucent.
- Add the mixed vegetables and stir-fry for 3-4 minutes until they are slightly tender.
- Push the vegetables to one side of the pan and add the cooked rice to the other side.
- Pour the soy sauce, chili sauce, vinegar, sugar, and salt over the rice. Mix well to combine with the vegetables.
- Cook for another 3-4 minutes, stirring constantly, until everything is well combined and heated through.
- Garnish with chopped spring onions and serve hot.
