Ingredients
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces

- 3 tablespoons chili garlic sauce
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 green onions, thinly sliced
- 1/4 cup peanuts, chopped (optional for garnish)
Instructions
- In a small dry skillet, toast the Szechuan peppercorns over medium heat until fragrant, about 2 minutes. Let them cool, then grind them into a fine powder using a spice grinder or mortar and pestle.
- In a small bowl, whisk together the soy sauce, rice vinegar, hoisin sauce, chili garlic sauce, and sesame oil. Set aside.
- Heat a large skillet or wok over high heat. Add 2 tablespoons of vegetable oil and swirl to coat the pan.
- Add the chicken pieces to the hot skillet and stir-fry until they are golden brown and cooked through, about 5-7 minutes.
- Push the chicken to the side of the skillet and add the garlic, ginger, and half of the green onions. Stir-fry for 1-2 minutes until fragrant.
- Pour the sauce over the chicken and stir to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.
- Transfer the Dragonfire Szechuan Chicken to a serving dish and garnish with the remaining green onions and chopped peanuts, if desired.
