Ingredients

  • 4 cups vegetable broth

  • 1 tablespoon chili paste
  • 1 teaspoon sesame oil
  • 1/2 cup firm tofu, cubed
  • 2 eggs, beaten
  • 1/4 cup sliced green onions
  • 1/4 cup sliced tofu skin
  • 1/4 cup cornstarch dissolved in 1/4 cup water

Instructions

  1. In a large pot, bring the vegetable broth to a boil.
  2. Add the shiitake mushrooms, bamboo shoots, rice vinegar, soy sauce, chili paste, and sesame oil. Simmer for 10 minutes.
  3. Gently stir in the tofu, then slowly pour in the beaten eggs while stirring the soup.
  4. Add the green onions and tofu skin, then slowly pour in the cornstarch mixture while stirring constantly until the soup thickens.
  5. Simmer for an additional 5 minutes, then serve hot.
