Ingredients
- 4 cups vegetable broth
- 1/2 cup sliced shiitake mushrooms
- 1/2 cup bamboo shoots
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon chili paste
- 1 teaspoon sesame oil
- 1/2 cup firm tofu, cubed
- 2 eggs, beaten
- 1/4 cup sliced green onions
- 1/4 cup sliced tofu skin
- 1/4 cup cornstarch dissolved in 1/4 cup water
Instructions
- In a large pot, bring the vegetable broth to a boil.
- Add the shiitake mushrooms, bamboo shoots, rice vinegar, soy sauce, chili paste, and sesame oil. Simmer for 10 minutes.
- Gently stir in the tofu, then slowly pour in the beaten eggs while stirring the soup.
- Add the green onions and tofu skin, then slowly pour in the cornstarch mixture while stirring constantly until the soup thickens.
- Simmer for an additional 5 minutes, then serve hot.
