Ingredients
- 8 oz soba noodles
- 2 tbsp sesame oil
- 2 cloves garlic, minced

- 1 cup shiitake mushrooms, sliced
- 2 tbsp soy sauce
- 1 tbsp chili garlic sauce
- 1 tbsp rice vinegar

Instructions
- Boil the soba noodles according to package instructions. Drain and rinse with cold water. Set aside.
- In a large skillet, heat sesame oil over medium heat. Add garlic and ginger, and sauté for 1 minute.
- Add the red bell pepper and shiitake mushrooms, and cook for 3-4 minutes until slightly softened.
- In a small bowl, whisk together soy sauce, chili garlic sauce, rice vinegar, and sugar. Pour the sauce into the skillet and stir to combine.
- Add the cooked soba noodles to the skillet and toss to coat with the sauce. Cook for an additional 2-3 minutes.
- Remove from heat and garnish with green onions and cilantro before serving.
