Dragon's Breath Spicy Soba Noodles

Ingredients

  • 8 oz soba noodles
  • 2 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, thinly sliced
  • 1 cup shiitake mushrooms, sliced
  • 2 tbsp soy sauce
  • 1 tbsp chili garlic sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 2 green onions, sliced
  • 1/4 cup cilantro, chopped

Instructions

  1. Boil the soba noodles according to package instructions. Drain and rinse with cold water. Set aside.
  2. In a large skillet, heat sesame oil over medium heat. Add garlic and ginger, and sauté for 1 minute.
  3. Add the red bell pepper and shiitake mushrooms, and cook for 3-4 minutes until slightly softened.
