Ingredients

  • 1 cup sliced shiitake mushrooms
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
  • 1 cup diced eggplant
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp grated ginger
  • 1 tsp minced garlic
  • 2 tbsp vegetable oil
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the garlic and ginger, and sauté for 1-2 minutes until fragrant.
  2. Add the red curry paste to the pot and stir for another minute.
