Ingredients
- 1 cup sliced shiitake mushrooms
- 1 cup diced carrots

- 1 cup diced eggplant
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp grated ginger
- 1 tsp minced garlic
- 2 tbsp vegetable oil
- Salt to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the garlic and ginger, and sauté for 1-2 minutes until fragrant.
