Ingredients
- 1 block of firm tofu, cubed
- 2 cups mixed vegetables (such as bell peppers, snap peas, and carrots)
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 cup vegetable broth
- 2 tbsp cooking oil
- Salt to taste
Instructions
- Heat the cooking oil in a large pan over medium heat.
- Add the tofu cubes and cook until golden brown. Remove from the pan and set aside.
- In the same pan, add the mixed vegetables and sauté until tender-crisp.
- Stir in the red curry paste, soy sauce, and brown sugar.
- Pour in the coconut milk and vegetable broth. Bring to a simmer.
- Add the cooked tofu back into the pan and simmer for 5-7 minutes.
