Dragon's Eye Vegetable And Tofu Curry

Ingredients

  • 1 block of firm tofu, cubed
  • 2 cups mixed vegetables (such as bell peppers, snap peas, and carrots)
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 cup vegetable broth
  • 2 tbsp cooking oil
  • Salt to taste

Instructions

  1. Heat the cooking oil in a large pan over medium heat.
  2. Add the tofu cubes and cook until golden brown. Remove from the pan and set aside.
  3. In the same pan, add the mixed vegetables and sauté until tender-crisp.
  4. Stir in the red curry paste, soy sauce, and brown sugar.
  5. Pour in the coconut milk and vegetable broth. Bring to a simmer.
  6. Add the cooked tofu back into the pan and simmer for 5-7 minutes.
  7. Season with salt to taste.
