Ingredients
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 cup carrots, sliced
- 1 can (14 oz) coconut milk
- 2 tablespoons soy sauce
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- Salt and pepper to taste
- 2 cups cooked rice for serving
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until fragrant.
- Add the sliced bell peppers, broccoli, snap peas, and carrots. Cook for 5-7 minutes until the vegetables are slightly tender.
- Pour in the coconut milk, soy sauce, curry powder, and turmeric. Stir to combine all the ingredients.
- Simmer the curry for 10-15 minutes, stirring occasionally, until the vegetables are cooked to your desired tenderness.
- Season with salt and pepper to taste.
