Ingredients
- 500g chicken breast, diced
- 2 tbsp Sichuan peppercorns
- 3-4 dried red chilies
- 1 onion, sliced
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 2 green onions, chopped
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sugar
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- Heat a wok or large skillet over high heat. Add the Sichuan peppercorns and dried red chilies. Dry roast for 1-2 minutes until fragrant.
- Add the vegetable oil, diced chicken, and a pinch of salt. Stir-fry until the chicken is cooked through. Remove the chicken from the wok and set aside.
- In the same wok, add a little more oil if needed. Sauté the onion, garlic, and ginger until fragrant.
- Return the cooked chicken to the wok. Add soy sauce, rice vinegar, and sugar. Stir-fry for another 2-3 minutes.
- Garnish with chopped green onions and serve hot.
