Ingredients

  • 500g chicken breast, diced
  • 2 tbsp Sichuan peppercorns
  • 3-4 dried red chilies
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 green onions, chopped
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat a wok or large skillet over high heat. Add the Sichuan peppercorns and dried red chilies. Dry roast for 1-2 minutes until fragrant.
  2. Add the vegetable oil, diced chicken, and a pinch of salt. Stir-fry until the chicken is cooked through. Remove the chicken from the wok and set aside.
  3. In the same wok, add a little more oil if needed. Sauté the onion, garlic, and ginger until fragrant.
  4. Return the cooked chicken to the wok. Add soy sauce, rice vinegar, and sugar. Stir-fry for another 2-3 minutes.
  5. Garnish with chopped green onions and serve hot.
