Ingredients
- 1 lb dried beef, cut into small pieces
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- Salt and pepper to taste
- 4 cups beef or vegetable broth
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the dried beef and cook until browned.
- Add the onion, garlic, tomatoes, and bell pepper to the pot. Cook until the vegetables are softened.
- Stir in the cumin, paprika, oregano, salt, and pepper. Cook for a few minutes to toast the spices.
- Pour in the beef or vegetable broth and add the diced potatoes. Bring the stew to a boil, then reduce the heat and simmer for about 2 hours, or until the beef is tender and the potatoes are cooked through.
- Adjust the seasoning if needed, then serve the dried beef stew hot, garnished with fresh herbs if desired.
