Ingredients

  • 1 lb dried potatoes
  • 1 lb pork shoulder, diced
  • 1 cup roasted peanuts
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp aji panca paste (Peruvian red pepper paste)
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat and add the diced pork. Cook until browned on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
  3. Stir in the aji panca paste, cumin, and paprika, coating the pork and onions with the spices.
  4. Add the dried potatoes, roasted peanuts, and chicken broth to the pot. Season with salt and pepper.
  5. Bring the stew to a simmer, then reduce the heat to low and cover the pot. Let it cook for about 2 hours, stirring occasionally, until the pork is tender and the potatoes are soft.
  6. Adjust the seasoning if needed and serve the Carapulcra hot, garnished with a sprinkle of chopped cilantro.
