Dried Potato Stew (carapulcra)
Dried Potato Stew, also known as Carapulcra, is a traditional Peruvian dish that is hearty, flavorful, and perfect for a cozy meal. This stew is made with dried potatoes, pork, peanuts, and a blend of aromatic spices, creating a rich and satisfying meal.
Ingredients
- 1 lb dried potatoes
- 1 lb pork shoulder, diced
- 1 cup roasted peanuts
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tbsp aji panca paste (Peruvian red pepper paste)
- 1 tsp cumin
- 1 tsp paprika
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat and add the diced pork. Cook until browned on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
- Stir in the aji panca paste, cumin, and paprika, coating the pork and onions with the spices.
- Add the dried potatoes, roasted peanuts, and chicken broth to the pot. Season with salt and pepper.
- Bring the stew to a simmer, then reduce the heat to low and cover the pot. Let it cook for about 2 hours, stirring occasionally, until the pork is tender and the potatoes are soft.
- Adjust the seasoning if needed and serve the Carapulcra hot, garnished with a sprinkle of chopped cilantro.
