Dried Yam Curry

Ingredients

  • 200g dried yam
  • 2 tbsp oil
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • Salt to taste
  • 2 cups water
  • Fresh coriander leaves for garnish

Instructions

  1. Soak the dried yam in water for 2 hours, then drain and set aside.
  2. Heat oil in a pan and sauté the chopped onion until golden brown.
  3. Add the ginger-garlic paste and sauté for a minute.
  4. Stir in the chopped tomatoes and cook until they turn mushy.
  5. Add the turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.
  6. Add the soaked dried yam and water. Cover and cook until the yam is tender.
  7. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
