Ingredients

  • 1 whole chicken, about 3 lbs
  • 1 cup Shaoxing wine
  • 2 inches ginger, sliced
  • 3 green onions, cut into 2-inch pieces
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 tsp Sichuan peppercorns

Instructions

  1. Bring a large pot of water to a boil.
  2. Add the chicken, ginger, and green onions to the pot. Reduce heat to low and simmer for 30 minutes.
  3. Remove the chicken and place it in a large bowl of ice water to cool. Once cooled, remove the skin and bones, and cut the chicken into bite-sized pieces.
  4. In a separate bowl, mix the Shaoxing wine, soy sauce, sugar, salt, and Sichuan peppercorns. Pour the mixture over the chicken and let it marinate for at least 1 hour.
  5. Transfer the drunken chicken to a serving plate and garnish with additional green onions, if desired.
