Drunken Chicken (醉鸡)
醉鸡 (Drunken Chicken) is a traditional dish from Haipai Cuisine, known for its tender and flavorful chicken infused with the aroma of Shaoxing wine.
Ingredients
- 1 whole chicken, about 3 lbs
- 1 cup Shaoxing wine
- 2 inches ginger, sliced
- 3 green onions, cut into 2-inch pieces
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1 tsp salt
- 1/2 tsp Sichuan peppercorns
Instructions
- Bring a large pot of water to a boil.
- Add the chicken, ginger, and green onions to the pot. Reduce heat to low and simmer for 30 minutes.
- Remove the chicken and place it in a large bowl of ice water to cool. Once cooled, remove the skin and bones, and cut the chicken into bite-sized pieces.
- In a separate bowl, mix the Shaoxing wine, soy sauce, sugar, salt, and Sichuan peppercorns. Pour the mixture over the chicken and let it marinate for at least 1 hour.
- Transfer the drunken chicken to a serving plate and garnish with additional green onions, if desired.
