Dry Fruit Fudge (exquisite Kardantu Barfi)
This Dry Fruit Fudge, also known as Exquisite Kardantu Barfi, is a traditional sweet from Uttara Karnataka Cuisine. It is a rich and delicious dessert made with a combination of dry fruits, nuts, and jaggery.
Ingredients
- 1 cup chopped dates
- 1 cup chopped figs
- 1 cup chopped almonds
- 1 cup chopped cashews
- 1 cup chopped pistachios
- 1 cup grated jaggery
- 1/2 cup ghee (clarified butter)
- 1/2 teaspoon cardamom powder
Instructions
- In a heavy-bottomed pan, heat ghee over medium heat.
- Add chopped dates and figs to the pan and sauté for 5 minutes.
- Add chopped almonds, cashews, and pistachios to the pan and continue to sauté for another 5 minutes.
- Add grated jaggery and cardamom powder to the pan and mix well. Cook for 10-15 minutes, stirring continuously, until the mixture thickens and starts to leave the sides of the pan.
- Transfer the mixture to a greased tray and spread it evenly. Allow it to cool and set for 1-2 hours.
- Cut the set mixture into pieces and serve as Dry Fruit Fudge (Kardantu Barfi).
