Dubliner Stuffed Mushrooms

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Dubliner cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Finely chop the mushroom stems.
  3. Heat the olive oil in a pan over medium heat. Add the chopped onion and garlic, and cook until softened.
  4. Add the chopped mushroom stems to the pan and cook for 5 minutes.
  5. Remove the pan from the heat and stir in the breadcrumbs, Dubliner cheese, and parsley. Season with salt and pepper.
  6. Spoon the filling into the mushroom caps and place them on a baking sheet.
  7. Bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown.
