Dubrovnik Stuffed Peppers (Dubrovačke punjene paprike)

Ingredients
- 4 large bell peppers
- 1 lb ground meat (beef or pork)
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the ground meat, cooked rice, onion, garlic, diced tomatoes, paprika, oregano, salt, and pepper.
- Stuff the bell peppers with the meat and rice mixture.
- Heat the olive oil in a large skillet over medium heat. Place the stuffed peppers in the skillet and cook for 5 minutes, turning occasionally, until they are browned on all sides.
- Pour the remaining diced tomatoes over the stuffed peppers in the skillet.
- Cover the skillet and simmer for 45-50 minutes, or until the peppers are tender.
- Serve the Dubrovačke punjene paprike hot, with a side of crusty bread or a fresh salad.
