Ingredients

  • 1 whole duck, cut into serving pieces
  • 1 cup soy sauce
  • 1 cup vinegar
  • 1 head garlic, minced
  • 3-4 pieces bay leaves
  • 1 teaspoon whole peppercorns
  • 1 cup water
  • 3 tablespoons cooking oil
  • Salt to taste

Instructions

  1. In a large bowl, marinate the duck pieces in soy sauce and vinegar for at least 30 minutes.
  2. Heat the cooking oil in a large pot over medium heat. Sauté the minced garlic until golden brown.
  3. Add the marinated duck pieces and cook until lightly browned.
  4. Pour in the marinade, add bay leaves, whole peppercorns, and water. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours or until the duck is tender.
  5. Season with salt to taste. Serve hot with steamed rice.
