Ingredients

  • 1 whole duck, cut into pieces
  • 6 cups water
  • 4 shallots, sliced
  • 3 cloves garlic, minced
  • 2 tomatoes, quartered
  • 3 tablespoons tamarind paste
  • 2 tablespoons palm sugar
  • 3 red chilies, sliced
  • 2 stalks lemongrass, smashed
  • 3 kaffir lime leaves
  • Salt to taste

Instructions

  1. In a large pot, bring the water to a boil. Add the duck pieces and simmer for 30 minutes. Skim off any impurities that rise to the surface.
  2. Add the shallots, garlic, tomatoes, tamarind paste, palm sugar, red chilies, lemongrass, and kaffir lime leaves to the pot. Simmer for another 1.5 hours or until the duck is tender.
  3. Season with salt to taste. Serve hot with steamed rice.
