Duck in Tamarind Soup, also known as Itek Siam, is a classic Peranakan dish that features tender duck in a tangy and savory tamarind-based broth. This flavorful soup is a perfect blend of sweet, sour, and spicy flavors, making it a comforting and satisfying meal.
Ingredients
- 1 whole duck, cut into pieces
- 6 cups water
- 4 shallots, sliced
- 3 cloves garlic, minced
- 2 tomatoes, quartered
- 3 tablespoons tamarind paste
- 2 tablespoons palm sugar
- 3 red chilies, sliced
- 2 stalks lemongrass, smashed
- 3 kaffir lime leaves
- Salt to taste
Instructions
- In a large pot, bring the water to a boil. Add the duck pieces and simmer for 30 minutes. Skim off any impurities that rise to the surface.
- Add the shallots, garlic, tomatoes, tamarind paste, palm sugar, red chilies, lemongrass, and kaffir lime leaves to the pot. Simmer for another 1.5 hours or until the duck is tender.
- Season with salt to taste. Serve hot with steamed rice.
