Ingredients
- 1 whole duck, cut into pieces
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 cups tomato puree
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups chicken broth
- 2 bay leaves
Instructions
- Season the duck pieces with salt, pepper, paprika, and cayenne pepper.
- Heat the vegetable oil in a large pot over medium heat. Brown the duck pieces on all sides, then remove and set aside.
- In the same pot, sauté the chopped onion and minced garlic until softened.
- Pour in the tomato puree and chicken broth, then add the bay leaves. Season with salt and pepper.
- Return the duck pieces to the pot, cover, and simmer for 1.5 to 2 hours, or until the duck is tender and the sauce has thickened.
