Duck Rice (arroz De Pato)

Ingredients

  • 1 whole duck, cut into pieces
  • 2 cups of rice
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bay leaf
  • 1/2 cup of white wine
  • 4 cups of chicken or vegetable broth
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Season the duck pieces with salt and pepper.
  2. In a large pot, sear the duck pieces over medium heat until browned. Remove the duck from the pot and set aside.
  3. In the same pot, sauté the onion, garlic, and bay leaf until the onion is translucent.
  4. Add the rice to the pot and stir to coat it with the onion and garlic mixture.
  5. Pour in the white wine and let it simmer for a few minutes until it reduces slightly.
  6. Return the duck pieces to the pot and add the broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 30 minutes or until the duck is tender and the rice is cooked.
  7. Once cooked, remove the bay leaf and discard. Garnish with chopped parsley before serving.
