Ingredients
- 1 whole duck, cut into pieces
- 200g salted vegetables
- 1.5L water
- 3 cloves garlic, minced
- 1 inch ginger, sliced
- 2 tomatoes, quartered
- 1 tbsp tamarind paste
- 2 tbsp sugar
- Salt to taste
Instructions
- Soak the salted vegetables in water for 30 minutes, then rinse and drain.
- In a large pot, bring the water to a boil. Add the duck pieces and simmer for 30 minutes.
- Add the salted vegetables, garlic, ginger, and tomatoes to the pot. Simmer for another 1 hour.
- Dissolve the tamarind paste in some water and add it to the soup. Season with sugar and salt to taste.
- Simmer for an additional 10 minutes before serving.
