Duck With Orange Sauce (canard À L'orange)

Ingredients

  • 1 whole duck, about 5 pounds
  • 2 oranges
  • 1 cup chicken broth
  • 1/2 cup orange juice
  • 1/4 cup sugar
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Score the skin of the duck breast and season with salt and pepper.
  3. In a large skillet, sear the duck breast, skin side down, until golden brown.
  4. Transfer the duck to a roasting pan and roast in the preheated oven for 45-60 minutes, or until the internal temperature reaches 165°F (74°C).
  5. While the duck is roasting, prepare the orange sauce. In a saucepan, combine the orange juice, chicken broth, sugar, and red wine vinegar. Bring to a simmer and cook until the sauce is reduced and slightly thickened.
  6. Zest and juice one of the oranges and add the zest and juice to the sauce. Season with salt and pepper to taste.
  7. Once the duck is cooked, let it rest for a few minutes before carving.
  8. Serve the duck with the orange sauce drizzled on top.
