Ingredients
- 1 whole duck, about 5 pounds
- 2 oranges
- 1 cup chicken broth
- 1/2 cup orange juice
- 1/4 cup sugar
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Score the skin of the duck breast and season with salt and pepper.
- In a large skillet, sear the duck breast, skin side down, until golden brown.
- Transfer the duck to a roasting pan and roast in the preheated oven for 45-60 minutes, or until the internal temperature reaches 165°F (74°C).
- While the duck is roasting, prepare the orange sauce. In a saucepan, combine the orange juice, chicken broth, sugar, and red wine vinegar. Bring to a simmer and cook until the sauce is reduced and slightly thickened.
- Zest and juice one of the oranges and add the zest and juice to the sauce. Season with salt and pepper to taste.
- Once the duck is cooked, let it rest for a few minutes before carving.
- Serve the duck with the orange sauce drizzled on top.
