Dukon (karkadeh Marinated Grilled Chicken)
Dukon is a traditional Sudanese dish featuring marinated grilled chicken, infused with the flavors of karkadeh (hibiscus) tea. This recipe combines the rich and tangy taste of karkadeh with succulent grilled chicken, creating a delightful fusion of flavors.
Ingredients
- 4 chicken breasts
- 2 cups strong brewed karkadeh tea, cooled
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a bowl, combine the karkadeh tea, minced garlic, cumin, paprika, coriander, salt, pepper, and olive oil to make the marinade.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for 6-7 minutes on each side, or until cooked through and grill marks appear.
- Remove from the grill and let the chicken rest for a few minutes before serving.
