Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1/2 tsp ground cinnamon
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 lb fresh spinach, washed and chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, ground cumin, coriander, turmeric, cayenne pepper, and cinnamon. Cook for 1-2 minutes until fragrant.
  4. Add the chicken pieces to the pot and brown on all sides, about 5-7 minutes.
  5. Pour in the diced tomatoes and chicken broth. Bring to a simmer and cook for 20 minutes, stirring occasionally.
  6. Add the chopped spinach to the pot and cook until wilted, about 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve the Dukon hot with steamed rice or flatbread.
