Ingredients
- 1.5 lbs chicken, cut into pieces
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1/2 tsp ground cinnamon
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 lb fresh spinach, washed and chopped
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, ground cumin, coriander, turmeric, cayenne pepper, and cinnamon. Cook for 1-2 minutes until fragrant.
- Add the chicken pieces to the pot and brown on all sides, about 5-7 minutes.
- Pour in the diced tomatoes and chicken broth. Bring to a simmer and cook for 20 minutes, stirring occasionally.
- Add the chopped spinach to the pot and cook until wilted, about 5 minutes.
- Season with salt and pepper to taste.
- Serve the Dukon hot with steamed rice or flatbread.
