Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium-high heat. Add the chicken thighs, skin side down, and cook until golden brown, about 5 minutes per side. Remove the chicken from the pot and set aside.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Stir in the minced garlic, ground cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  5. Pour in the diced tomatoes and chicken broth. Bring the mixture to a simmer.
  6. Return the chicken thighs to the pot, nestling them into the tomato sauce. Cover and simmer for 30 minutes, or until the chicken is cooked through.
  7. Adjust the seasoning with salt and pepper, if needed.
  8. Serve the Dukon hot, garnished with fresh cilantro.
