Dukon (sudanese Spiced Chicken Curry)
Dukon is a flavorful Sudanese spiced chicken curry that is perfect for a comforting meal. The aromatic spices and tender chicken make this dish a favorite in Sudanese cuisine.
Ingredients
- 1.5 lbs chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp tomato paste
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground cardamom
- 1/4 cup vegetable oil
- Salt and pepper to taste
- 2 cups chicken broth
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onions, garlic, and ginger. Cook until the onions are soft and translucent.
- Add the chicken pieces and brown on all sides.
- Stir in the tomatoes, tomato paste, and spices. Cook for 5 minutes.
- Pour in the chicken broth and season with salt and pepper. Bring to a simmer.
- Cover and cook for 30 minutes, or until the chicken is cooked through.
- Garnish with fresh cilantro before serving.
