Dum Aloo Banarasi (दम आलू बनारसी)

Dum Aloo Banarasi is a traditional Kashmiri dish known for its rich and aromatic flavors. This recipe features deep-fried baby potatoes cooked in a creamy and spicy yogurt-based gravy, making it a perfect dish for special occasions or gatherings.

Dum Aloo Banarasi (दम आलू बनारसी)

Ingredients

  • 500g baby potatoes, boiled and peeled
  • 1 cup yogurt
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 tsp ground fennel seeds
  • 1/2 tsp ground cardamom
  • 2 tbsp ghee (clarified butter)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the ghee separates.
  3. Whisk the yogurt and add it to the pan along with turmeric, red chili powder, garam masala, ground fennel seeds, ground cardamom, and salt. Cook for 5 minutes.
  4. Add the boiled baby potatoes to the gravy and simmer for 15-20 minutes on low heat, allowing the flavors to infuse.
  5. Garnish with fresh coriander leaves and serve hot with naan or rice.
