Dum Aloo Banarasi (दम आलू बनारसी)
Dum Aloo Banarasi is a traditional Kashmiri dish known for its rich and aromatic flavors. This recipe features deep-fried baby potatoes cooked in a creamy and spicy yogurt-based gravy, making it a perfect dish for special occasions or gatherings.
Ingredients
- 500g baby potatoes, boiled and peeled
- 1 cup yogurt
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1/2 tsp ground fennel seeds
- 1/2 tsp ground cardamom
- 2 tbsp ghee (clarified butter)
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the ghee separates.
- Whisk the yogurt and add it to the pan along with turmeric, red chili powder, garam masala, ground fennel seeds, ground cardamom, and salt. Cook for 5 minutes.
- Add the boiled baby potatoes to the gravy and simmer for 15-20 minutes on low heat, allowing the flavors to infuse.
- Garnish with fresh coriander leaves and serve hot with naan or rice.
