Dum Aloo Delight

Ingredients

  • 500g baby potatoes
  • 1 cup yogurt
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 tbsp cashew nuts, ground into a paste
  • 2 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Boil the baby potatoes until they are fork-tender. Peel and prick them with a fork.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the oil separates.
  4. Whisk the yogurt and add it to the pan along with the cashew nut paste, turmeric, red chili powder, ground coriander, ground cumin, and salt. Cook for 5 minutes.
  5. Add the boiled potatoes and garam masala. Cover the pan with a lid and let it simmer on low heat for 15-20 minutes.
  6. Garnish with fresh cilantro and serve hot with naan or rice.
