Dum Pukht Chicken
Dum Pukht Chicken is a classic dish from the Mughlai cuisine, known for its rich and aromatic flavors. This slow-cooked chicken dish is a perfect blend of spices and tender meat, making it a favorite for special occasions and gatherings.
Ingredients
- 1 whole chicken, cut into pieces
- 1 cup yogurt
- 2 onions, finely sliced
- 2 tomatoes, pureed
- 4 cloves garlic, minced
- 2-inch ginger, grated
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 cup ghee or clarified butter
- Salt to taste
Instructions
- Marinate the chicken pieces with yogurt, ginger, garlic, red chili powder, turmeric powder, and salt. Let it marinate for 1 hour.
- In a heavy-bottomed pan, heat ghee and add the sliced onions. Cook until golden brown.
- Add the marinated chicken and cook for 10 minutes.
- Add the tomato puree, garam masala, cardamom, cinnamon, and cloves. Mix well.
- Cover the pan with a tight-fitting lid and let the chicken cook on low heat for 45 minutes to 1 hour, until tender.
- Garnish with fresh coriander leaves and serve hot.
