Dungannon Black Bacon and Cabbage Rolls are a traditional Northern Irish dish that combines the rich flavors of black bacon with the freshness of cabbage, creating a hearty and satisfying meal.
Ingredients
- 8 slices Dungannon Black Bacon
- 1 head cabbage, cored
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
Instructions
- Blanch the cabbage leaves in boiling water for 2 minutes, then drain and set aside.
- Cook the Dungannon Black Bacon in a skillet until crispy, then crumble and set aside.
- In the same skillet, sauté the onion and garlic until softened.
- Combine the cooked rice, crumbled bacon, sautéed onion and garlic, thyme, salt, and pepper in a bowl.
- Place a spoonful of the rice mixture onto each cabbage leaf, then roll up and secure with toothpicks.
- Place the cabbage rolls in a pot, pour the broth over them, and bring to a simmer.
- Cover and cook for 45 minutes, or until the cabbage is tender.
- Remove the toothpicks before serving.
