Dungannon Black Bacon And Cabbage Rolls

Ingredients

  • 8 slices Dungannon Black Bacon
  • 1 head cabbage, cored
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Blanch the cabbage leaves in boiling water for 2 minutes, then drain and set aside.
  2. Cook the Dungannon Black Bacon in a skillet until crispy, then crumble and set aside.
  3. In the same skillet, sauté the onion and garlic until softened.
  4. Combine the cooked rice, crumbled bacon, sautéed onion and garlic, thyme, salt, and pepper in a bowl.
  5. Place a spoonful of the rice mixture onto each cabbage leaf, then roll up and secure with toothpicks.
  6. Place the cabbage rolls in a pot, pour the broth over them, and bring to a simmer.
  7. Cover and cook for 45 minutes, or until the cabbage is tender.
  8. Remove the toothpicks before serving.
