Dungannon Black Bacon And Potato Soup

Ingredients

  • 1 pound Dungannon Black Bacon, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 large potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
  2. Add the chopped onion and minced garlic to the pot with the bacon fat and cook until the onion is translucent.
  3. Add the diced potatoes and chicken or vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
  4. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
  5. Stir in the heavy cream and cooked bacon. Season with salt and pepper to taste.
  6. Simmer the soup for a few more minutes to heat through, then serve hot.
