Ingredients
- 1 pound Dungannon Black Bacon, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 large potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
- Add the chopped onion and minced garlic to the pot with the bacon fat and cook until the onion is translucent.
- Add the diced potatoes and chicken or vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
- Stir in the heavy cream and cooked bacon. Season with salt and pepper to taste.
- Simmer the soup for a few more minutes to heat through, then serve hot.
