Durban Bunny Chow Nachos

Ingredients

  • 4 hollowed-out bread rolls (bunny chow)
  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 cup grated cheddar cheese
  • 1 jalapeño, sliced (optional)
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and garlic, and cook until the onion is soft.
  2. Stir in the diced tomatoes and kidney beans. Season with salt and pepper, and simmer for 15 minutes.
  3. Preheat the oven to 350°F (175°C).
