Durban Chicken Bunny Chow Sliders

Ingredients

  • 12 mini slider buns
  • 1.5 lbs boneless, skinless chicken thighs, diced
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons Durban masala spice blend
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, grated ginger, and Durban masala spice blend to the pot. Cook for 1-2 minutes, stirring constantly, until fragrant.
  3. Add the diced chicken thighs to the pot and cook until browned on all sides.
  4. Pour in the diced tomatoes and chicken broth. Season with salt and pepper to taste. Bring the mixture to a simmer and cook for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.
  5. To assemble the sliders, hollow out the center of each mini bun and fill with a generous scoop of the Durban chicken curry. Garnish with chopped cilantro and serve hot.
