Ingredients
- 2 lbs chicken, cut into pieces
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 cinnamon stick
- 1 cup coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add onions, garlic, and ginger. Sauté until onions are soft and translucent.
- Add chicken pieces and cook until browned.
- Stir in curry powder, turmeric, cumin, coriander, and cinnamon stick. Cook for 2 minutes.
- Add chopped tomatoes and cook until they start to break down.
- Pour in coconut milk and simmer for 30-40 minutes, or until the chicken is cooked through and the sauce has thickened.
- Season with salt and pepper to taste.
- Serve hot with rice or bread.
