Durban Chicken Curry

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 cinnamon stick
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add onions, garlic, and ginger. Sauté until onions are soft and translucent.
  3. Add chicken pieces and cook until browned.
  4. Stir in curry powder, turmeric, cumin, coriander, and cinnamon stick. Cook for 2 minutes.
  5. Add chopped tomatoes and cook until they start to break down.
  6. Pour in coconut milk and simmer for 30-40 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Season with salt and pepper to taste.
  8. Serve hot with rice or bread.
